Cornish Pink Lady
Fruity and full bodied with a zesty finish

Ingredients:
- 50 ml TARQUIN'S RHUBARB & RASPBERRY GIN
- 20 ml SIMPLE SYRUP
- 1 tsp RASPBERRY JAM
- 25ml LEMON JUICE
- 1 EGG WHITE
- 2 DASHES RHUBARB BITTER
- FRESH RASPBERRIES & MINT SPRIG {for garnish}
- cubed ICE
Method:
- Place all of your wet ingredients, including the egg white and raspberry jam into an iced shaker
- Shake hard for 30 seconds
- Then strain to remove the ice
- Shake again without ice (dry shake) for a further 30 seconds
- Pour into a coup glass
- Garnish with fresh raspberries and a sprig of mint
